Today I have been reviewing my menus;
I’m making some changes for summer 2009.

What I do now is simply cook .Trying out new ideas and of course Costas has to eat every day, so now he thinks he’s some kind of Michelin critic!

A lot of you have asked me how to make and cook dishes from our restaurant I thought I would share with all you budding chefs out there some secrets & recipes .
So… when it’s cold & grey outside, you can bring the sunshine and flavour from Lesvos back to your kitchens , dinner tables and friends.

Today we will start with something very tasty, yet simple to make.

Omega’s Garlic Bread
You will need:
A loaf of bread (not square)
Garlic
Salt
Margarine
Oregano
Olive oil


1. Take 500gms of margarine & place in a bowl (keep container & lid)*
2. Take 1-2 cloves of garlic and either grate or crush add to bowl
3. Take dessert spoon of dried oregano and add to bowl.
4. Take a pinch of salt and add to bowl (if using spreadable butter don’t add salt)
5. Mix together by hand or with electric whisk.
6. Cut loaf of bread into slices (roughly ½ inch thick) and lightly toast
7. Sprinkle salt and oregano over the toast.
8. Drizzle with olive oil.

Serve while hot to table with side helping garlic butter mix
*put left over garlic butter mix back in container and keep in fridge.

NB. If you want to make less than 500gms use a smaller container and ½ the quantities.



Enjoy this as a starter or a light snack.

OMEGA RESTAURANT & BAR

WELL SUMMER SEASON 2008 IS OVER; I CAN SAY I HAVE MIXED EMOTIONS. FIRSTLY I AM EXCITED!

WELL, AS KNOW WHEN YOU HAVE A SEASONAL BUSINESS (which only closes between the hours of 1am-ish and opens again at 7am) YOU ARE VERY RARELY IN YOUR HOUSE (usually only to sleep), I FORGET HOW NICE IT IS TO JUST HAVE A NICE CUPPA (thanks to everyone who donated to this cause J.) AND WATCH TV.

SECONDLY I AM VERY SAD
BECAUSE I NOW WON’T SEE MY FRIENDS (& make new friends) till MAY 2009 WHEN IT ALL STARTS AGAIN…..
SO I HOPE THIS (blog) WILL BRING US ALL A LITTLE BIT CLOSER OVER THE NEXT FEW MONTHS.
