For those cold winter nights try kokkeeneesto greek red beef





Welcome to 2009, let’s hope it brings luck & love to everyone!
So today I was looking at the weather forecast for the UK & Europe and the whole place looks wet, cold & grey!
No surprise there really its January………..
Christmas & New Year are just a mere memory now.
I’ve seen all kinds of adverts on the TV letting us know that we’ve all got no money and the sales are on! If that isn’t a paradox in its self I don’t what is…….
As my Nan used to tell me look after the pennies & the pounds will take care of themselves….wise words.
We are going to start the New Year with a real winter warmer for you so here goes……..

KOK-KEEN-E-STO (RED BEEF)
This dish literally means everything RED… red meat, red veg, red spices
You will need:-
1 kilo beef (cubed) this serves 4-6
1 onion (finely chopped)
2 small cloves of garlic (crushed)
1 tin tomatos (chopped)
100ml sieved tomato sauce (if you have not got tomato sauce use tomato soup)
200ml vegetable stock (use a stock cube)
100ml white wine
2 tsp dried parsley
1 cinnamon stick
Salt
Black pepper
A little sugar
Olive oil
Pre-heat oven 160°

1. Drizzle olive oil in the bottom of a casserole dish/ stamna pot.
(If you have not got a casserole dish with a lid then you can use a large saucepan with a lid.)
2. Add finely chopped onion, crushed garlic & dried parsley (mix together)
3. Add cubed beef, sprinkle with salt & black pepper.
4. Mix vegetable stock with white wine & a sprinkle of sugar
(You can use 50ml red wine instead if you wish; I just prefer the flavour of white wine in this dish)
5. Pour over meat
6. Add tin chopped tomatos, tomato sauce & cinnamon stick.
Mix all together, make sure beef is submerged
7. Put lid on tight & place in pre -heated oven for 1½ - 3hours at 160°

This dish can be served with almost anything pasta, rice or roast potatoes
Don’t forget your veggies & fresh bread.
