Recipe for Bouyourdi


Every morning I walk my dog. We do the circuit of Anaxos which is 2kms. We walk from my house to the beach (passing Lakis Studios, Anaxos Gardens Apartments), along the front (passing Mythos Bar & Palatinos) we stop by the watersports hut play fetch with any sticks that have been washed up on the beach over night, then continue on to the furthest beach road and up again to the main road ( passing Anaxos Hill’s windmill & Elefteria Aparments ) along the main road stopping at the bakers to buy fresh bread totake back home.
I never get tired this, today, the skies are blue with dots of cotton ball clouds, there is a slight warm breeze & the sea laps gently on the shore.

Now I’ve set the scene for you, lets cook!

BOUYOURDI (boar-your-dee)

This was without a doubt THE most popular starter dish for summer 2008 & There are 4 ways to cook it!

Saganaki – (small frying pan that is served straight to the table on a wooden stand) cook for 3-4mins medium heat.

Stamna – (small oven proof clay pot/dish which is served straight to the table) cook for 10mins in the oven at 160°..

Aluminium foil-(wrapped so no air will escape & cooked on a BBQ grill ) cook on a hot grill for 3-5mins.

Microwave-(use a microwave oven proof soup bowl) cook on ½ heat for 2-3mins.

You will need:
Feta cheese
Green pepper
Tomato
Olive oil
Oregano
Tabasco (optional)

1. Take the stamna pot & drizzle with olive oil.
2. Take the tomato & slice ¼ inch thick use slices to cover the bottom of your pot/dish.
3. Take a slice of feta cheese approx. ½ inch thick & place it on top of tomatos.
4. Take green pepper & slice through the diameter approx ¼ inch thick, making rings put 3 on top of the feta cheese.
5. Drizzle with olive oil.
6. Sprinkle with oregano (approx. ¼ teaspoon)
7. Optional: add a tiny splash of Tabasco for a little zing!
8. Place in pre-heated (160°) oven for 10mins or until cheese is melted.
9. Serve in oven dish straight to the table.

NB. As the cheese melts it releases its salt content, so don’t be tempted to add some.
Use the same method of layering to make bouyourdi weather you are using BBQ, oven, frying pan or microwave.
